Cherry Tomato Relish
- 1 small onion chop fine
- Pinch of sea salt
- 1 clove garlic sliced
- 1/2 cup caster sugar
- 1/2 cup red wine vinegar
- Pinch seal salt & ground black pepper
- 500 grams cherry tomatoes
- 4 medium red tomatoes chopped
- Finely dice onion and gently cook in a pan at low heat for 5 minutes or until soft. Add pinch of sea salt. Add sliced garlic and cook for a few minutes. Add cherry tomatoes & 4 red tomatoes chopped. Add caster sugar, red wine vinegar together with pinch of sea salt & black pepper. Bring to the boil on high heat and allow the mixture to thicken.
