
Three minute sponge
Ingredients
- 1 cup plain flour
- 3/4 cup caster sugar
- 3 eggs
- 3 tbsp butter melted
- 2 tbsp milk
- 2 tsp baking powder
- raspberry jam decorating
- cream whipped
Instructions
- Pre- heat oven 190 C. Grease one 20 cm round sponge tins. Line with baking paper. Put flour, sugar, eggs, butter and milk in a electric mixer bowl and beat on high for 3 minutes. Stir in baking powder. Pour into prepared tins. Bake 15-20 minutes or until sponge springs back when lightly touched. Leave in tins for 5 minutes before turning out onto cake racks. When cold sandwich together with jam and cream.
Notes
To make two sponges you need to double the recipe.
