Lemon curd cupcakes


  • 125 g butter or margarine softened
  • 125 g caster sugar
  • 2 eggs
  • 185 g self- raising flour
  • pinch Aof baking powder
  • 1 lemon rind grated and juice
  • 1/4 cup milk
  • 4 tbsp icing sugar
  • Homemade lemon curd or shop brought
  • Icing sugar to decorate


  • Pre-heat oven 160 C. Using a muffin tin, put muffin cases in tin Beat together the butter, sugar, eggs, flour, baking powder, lemon rind & juice and milk. Mix till a soft consistency. Fill cases 2/3 full and cook in oven for 25-30 minutes. Leave in the tin to cool for 5 minutes, then transfer to a cake rack to cool. Cut a hole on the top fill with 1 tsp curd, replace top and sprinkle with icing sugar.
