Pork loin in ginger beer with mash potato and cabbage

Ingredients
  

  • 2 pork loin steaks
  • 8 potatoes, peeled, washed cut into pieces
  • 25 grams butter
  • 2 tbsp olive oil
  • 1 clove garlic , crushed
  • 2 tbsp plain flour
  • 1 cup ginger beer
  • 1 tbsp brown sugar
  • 2 tsp worcestershire sauce
  • 1 cup cabbage, finely shredded

Instructions
 

  • Peel potatoes and cut into pieces, then put into a pot, covered with cold water. Boil uncovered for 15 minutes or until cooked. Drain. Mash potatoes and add butter and milk.
  • In a pan heat oil and cook cabbage and garlic , stirring for 5 minutes or until softened. Stir cabbage mixture into mashed potato. Season. Cover to keep warm.
  • Heat remaining oil in same fry pan over high heat and cook pork turning for 6-8 minutes or until browned and almost cooked.Remove from pan .
  • In same pan add flour and mix the pan juices till combined. Stir in ginger beer, brown sugar, Worcestershire sauce. Bring to the boil. Boil uncovered for 10 minutes or until thickened. Return pork to pan , simmer uncovered for 5 minutes or until pork is cooked and sauce is thick.
  • Serve pork with mashed potato and cabbage & veg.
