A easy potato, chorizo and parsley tortilla, cooked in a 20cm fry-pan to get a nice thickness for 2.

Ingredients

  • 2 potatoes, medium, peeled thinly sliced

  • 1 Tbsp olive oil

  • 1 onion, finely chopped

  • 1 chorizo sausage, chopped

  • 4 eggs, lightly beaten

  • 1/2 bunch parsley, chopped

Directions

  • Cook potato until tender. Drain well.
  • Heat 1 tablespoon olive oil in pan and cook onion until softened. Add chorizo and cook for a few minutes, then stir in parsley.
  • Beat eggs and season really well. Tip potato,onion and chorizo into the bowl, mix, stir and cook for 5 minutes, flip and cook other side. This is a great size ideal for 2 people.
