Who doesn’t love the taste of ginger bread in a loaf tin. A good loaf to make for the festive season. Can make these loaves and give as a gift. Or have to eat by itself or with some butter and a hot cuppa. Give this a go, so easy to make.

Ingredients

  • 150 grams butter, chopped

  • 100 grams brown sugar

  • 250 mls treacle

  • 2 eggs, lightly beaten

  • 425 grams plain flour

  • 1 tsp baking soda

  • 4 tsp ground ginger

  • 2 tsp cinnamon

  • 1/2 tsp salt

Directions

  • Heat oven to 180 C. Grease a 23 cm loaf tin cooking spray and line the bottom with baking paper.
  • Put the butter, brown sugar, and treacle in a saucepan and on medium heat until sugar and butter has melted. Add the water, stirring to incorporate the liquids. Beat in the eggs.
  • Sift the flour, baking soda, spices and salt over the wet ingredients. Stir until all is mixed together. Pour mixture into the loaf tin and bake for 45 minutes. If your loaf is cooked when a skewer inserted into the center comes out clean. If cake is not cooked, bake for 2 minutes and check. When cooked allow to cool in tin for 5 minutes and then turn out onto a cake rack to cool completely.
    Enjoy on it’s own or with butter.
