Lamb Kofta

Bring the family together with lamb koftas for a mid week meal. Pair this with a Lebanese flat bread, rice and side salad.

Ingredients

  • 1 small brown onion, grated

  • 500 grams lamb mince

  • 1 tsp ground cumin

  • 1 egg, lightly beaten

  • 1 clove garlic, crushed

  • season with salt and pepper

  • 1/3 cup finely chopped fresh flat-leaf parsley

  • 1 tsp ground coriander

  • 1/2 cup fresh breadcrumbs

  • 2 large or medium tomatoes, sliced thinly

  • 1/2 medium onion, thinly sliced

  • 1 cup finely shredded lettuce

  • 1 Tbsp olive oil

  • season with salt and pepper

Directions

  • Combine onion, mince, parsley, cumin, coriander, egg, breadcrumbs and garlic in a bowl. Mix to combine. Season with salt and pepper. Roll level tablespoons of mixture into balls. Place on a plate.
  • Heat an non stick fry pan on medium high. Add oil. Add koftas to pan. Cook, turning occasionally, for 10 minutes or until cooked through. Transfer to a large baking tray. Cover with foil. Rest for 5 minutes.
  • Cut lettuce, onion and tomatoes thinly. Layer in a dish with lettuce on the bottom with sliced onion and tomato . Garnish with flat leaf parsley. Season with salt and pepper and drizzle olive oil over top.
