This is a one bowl super easy apple cake, which is moist and insanely delicious.
8 Tbsp butter, very soft
1 2/3 cup granulated sugar
2 large eggs, at room temperature
2 1/3 cup plain flour
2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground cloves
3/4 tsp salt
4 cups chopped unpeeled apples
- Preheat the oven to 325 F/ 190 C. Spray a 9″ x 13 round springform tin. Line with baking paper.
- Combine the soft butter and sugar in a large mixing bowl. Stir together until well combined. Add the eggs , one at a time, whisking well after each addition.
- Sprinkle the flour, baking soda, cinnamon, cloves and salt over the top of the butter mixture and stir well until all of the flour is incorporated and the mixture is crumbly.
- Add the apples and mix well. Allow the mixture to sit for 5 minutes then stir until well combined. The apples release some of their juice and the stiff mixture becomes a thick, creamy batter.
Spread the batter in the prepared tin, smoothing the top.
Bake the cake for 40- 50 minutes . Cake is cooked when a toothpick inserted in the center comes out clear. If cake still not cooked allow it to bake for 5 more minutes at 1 minute intervals. It may need all the five minutes or less.
Leave in tin for 10 minutes, then invert cake onto a cake rack. Allow to cool completely.
This can be eaten just as, or with a light dusting of icing sugar or if you like a simple icing on top.
