Easy coconut cookies that have very simple ingredients and are quick to make.
1 cup self raising flour
1 cup desiccated coconut
1 cup sugar
1 egg, lightly beaten
125 grams butter, melted
- Preheat oven to 180C. Line 2 baking trays with baking paper.
- Sift flour , stir in coconut and sugar to combine. Mix in egg and melted butter, until all ingredients are moist.
Roll tablespoon sized balls and put onto trays, making sure to space well apart.
Bake 10 minutes or until golden. Cool on trays for 5 minutes to firm up and than transfer onto a cake rack to cool completely.
