My Version of Japanese Fried Rice

minutesThis is a quick and easy fried rice. I never used the fried rice seasoning, just used the pantry staples I had in the cupboard. I sure love the taste of Japanese food and so far this has become a staple in our family.
Ingredients
2 cups cooked rice or cook some fresh rice
2 eggs
2/3 cup finely chopped carrot
2/3 cup finely chopped onion
300 grams shredded ham
I substituted shallots for 4 green flat beans, chopped
1 Tbsp sesame oil
1 Tbsp oyster sauce
1 Tbsp soy sauce
3 Tbsp oil
Directions
- Heat 2 tablespoons of oil in a wok or a large frypan over medium heat.
- Turn the heat up to high and add 2 eggs into the wok/pan. Stir, breaking the egg yolks and mixing with whites. When mostly cooked transfer the egg to a plate, set aside. I chopped into lengths and cut into small pieces.
- Add the last tablespoon of oil to the wok/pan over high heat, Add carrot, flat beans and onion. Stir fry for 1 minute and then add the ham. stir fry for another 30 seconds to 1 minute until onion pieces become transparent.
- Add the rice and stir for about 30 seconds, ensuring that each rice grain is separated and there are no lumps of rice.
- Add the egg and stir for 30 seconds, add chopped eggs. Add the sesame oil, soy sauce and oyster sauce. Mix well. Turn heat off and serve while still hot.
- Can use cold rice, just need to microwave for 1 minute to warm up.
