Ham, Pea and cheese Fritatta

A nice way to use up leftover Christmas ham, by making a pasta inspired frittata. So easy to mix and make. Can be cooked on the stove top and finished in the oven to make sure all the egg is cooked and you have a nice colouring on top, or not. Will not change the taste of the frittata.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 brown onion, thinly sliced
  • 8 eggs
  • 200 grams leg ham, chopped into chunks
  • 1 cup frozen peas
  • 2 cups any short pasta
  • 1 cup grated tasty cheese

Instructions
 

  • Heat oil in a ovenproof frypan over medium heat. Cook onion stirring for 2-3 minutes or until onion has softened and still opaque.
  • Whisk eggs in a bowl with salt and pepper.
  • Add ham, peas pasta and cheese to pan and on a very low heat cook for 6-8 minutes until almost firm. Tilting the pan, drawing in the sides from time to time, so egg cooks evenly.
