Ingredients
  

  • 4 cups Tapioca flour
  • 1 ¼ cups milk
  • ½ cup water
  • 6 tbsp oil virgin, vegetable, canola, any you have on hand
  • cups grated parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 2 large eggs
  • 2 tsp salt

Instructions
 

  • Preheat oven to 400℉ (205℃) with a rack in the middle.
  • Combine the milk, water, oil and salt in a saucepan and bring to the boil.
  • Add the tapioca flour to the bowl of a stand mixer and, once the milk mixture boils, pour it over the flour. Turn the mixer on to medium speed and mix it well. The mixture will be like fondant, really white and sticky.
  • With the mixer still beating, add the eggs one at a time. It will look like they won't mix but just let it beat until combined.
  • Once the eggs are incorporated, add the Mozzarella and Parmesan cheese a little at a time until fully incorporated.
  • The dough should be soft and sticky. If you are worried it is too liquid then add a little more tapioca flour, don't add too much or the bread will be tough.
  • To shape the balls, wet your hands and shape golf sized balls, even a bit smaller is good. If you have a mini muffin tray it is ideal with a small ice cream scoop.
    Other wise place the balls on a baking tray covered with baking paper.
  • Bake in oven for 15-20 minutes or until puffed up and golden.
  • Serve warm.

Notes

To freeze the balls, Once they are shaped place on a tray lined with baking paper and place in freezer till frozen, then transfer to a ziplock freezer bag. They will keep for up to 3 montths.
To cook from frozen place on a tray and cook in oven as above.
I have cooked them in an air fryer with good results also. Air fryer at 200℃ for 15-20 minutes.
