Raisin and date loaf

I love fruit and nut loaves a lot, so I found this recipe and adapted it. It is great tasting and better after a couple of days if there is any left. Can be eaten plain or with butter.

Ingredients

  • 1 cup sugar

  • 50 grams butter

  • 1 cup raisins

  • 1 cup dates, chopped

  • 1 Tbsp golden syrup

  • 1 1/4 cups water

  • 1 tsp mixed spice

  • 1 tsp ground ginger

  • 1/2 cup walnuts, roughly chopped

  • 1/2 cup macadamias, roughly chopped

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • 2 cups flour

  • 1 tsp baking soda

  • 1 tsp baking powder

Directions

  • Preheat oven to 170 C. Line a 23 cm x 14 cm loaf tin with baking paper.
  • Place sugar, butter, raisins, dates, golden syrup and water in a large pot. Bring to a boil and simmer for 5 minutes. Set aside and allow to cool for 10 minutes.
  • Stir mixed spice, ginger, walnuts, macadamia nuts, vanilla and salt into the date mixture. Add flour , baking powder and baking soda and mix to combine.
  • Pour into loaf tin and bake for 1 hour or until a skewer inserted in the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack to cool completely.
