Lemon, sweet chilli and honey chicken cutlets

For an easy meal try these chicken cutlets in a honey, lemon and chilli marinade, baked in the oven. Beautiful sticky chicken pieces, eat with your fingers. Could be a family favourite.

Ingredients

  • 12 chicken cutlets, skin on

  • 6 fresh lemons, juice only

  • 3 Tbsp sweet chilli sauce

  • 1/2 cup runny honey

  • salt and pepper to taste

Directions

  • Pre-heat oven to 200C. Add chicken cutlets, skin side up in a large baking dish.
  • In a small bowl add the lemon juice, sweet chilli sauce and runny honey. Mix all together. Spread the marinade all over the chicken pieces. Bake in oven for 45 minutes until chicken is cooked and a nice golden colour.
  • You can serve this with rice or a side salad.
