Apricot & walnut muffins

A delicious combination of sweet dried apricots and walnuts. Great for breakfast or a make ahead snack to eat when on the go.Easy to make.

Ingredients

  • 1 1/2 cups plain flour

  • 1/2 cup wholemeal flour

  • 1/2 cup brown sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp ground cinnamon

  • 2 eggs, lightly beaten

  • 3/4 cup buttermilk or 3/4 cup milk

  • 1/2 cup chopped dried apricots

  • 1/2 cup walnuts, chopped

  • 3/4 cup uncooked oats

  • 3 Tbsp of butter, melted, allow to cool slightly

Directions

  • In a large bowl mix together, flours, brown sugar, baking soda, oats, baking powder, salt, cinnamon and mix all well together.
  • Add eggs, buttermilk,slightly cooled butter and mix in flour mixture mix till just combined. Fold in apricots and walnuts. Spray 12 cup muffin tin. Divide batter evenly in muffin tin. Can top each muffin with more walnuts and lightly sprinkle top with cinnamon sugar.
  • Bake muffin in 375F/190C in preheated oven for 20 minutes. Test muffins using a toothpick , set in the middle and if the tooth pick comes out clean the muffins are done, other wise bake an additional 2 minutes and test again.
