Ginger Kisses

        Ingredients

        50g butter

        100g sugar
        1 Tbsp golden syrup

        2 eggs

        160g plain flour
        1 tsp baking powder

        1 tsp cinnamon

        2 tsp ground ginger



        Ginger butter cream
        25g butter

        64g (1/2 cup) icing sugar

        About 3 Tbsp boiling water



        Method


        Pre heat oven to 200C.

        Combine butter, golden syrup and sugar in a medium saucepan.  Stir over a low

        heat till butter is melted and you have a smooth mix.


        Beat eggs until thick and mix in alternately with sifted dry ingredients.  Place small
        spoonful on to lined trays.


        Bake for 10 to 12 minutes.


        When cool sandwich together with butter cream.

        Ginger Butter Cream


        Put all ingredients into a bowl and beat with an electric beater until a thick and
        creamy consistency.  Sandwich together.
