White Chocolate and Cranberry Biscuits

        Ingredients


        213g plain flour

        1 ½ tsp baking soda

        1 cup brown sugar
        ½ cup shredded coconut

        ½ cup dried cranberries
        ½ cup white chocolate bits

        150g butter, melted

        1 egg, lightly beaten




        Method


        Pre-heat oven 180C/160C fan.

        Line 2 baking trays with baking paper


        Sift flour and baking soda. Add sugar, coconut, cranberries, white chocolate.

        Melt butter and allow to cool.


        Lightly beat egg. Add wet ingredients to dry mix and mix till combined.


        Roll tablespoon sized balls and space them 5cm apart.

        Bake for 10-15 minutes or until golden. Cool on trays for 5 minutes.


        Transfer onto a wire rack to cool completely.
