Afghans




        Ingredients


        200g butter, softened
        ½ cup sugar
        1¼ cup plain flour

        ¼ cup cocoa
        2 cups cornflakes

        Chocolate icing
        1-2 cups icing sugar

        2 Tbsp cocoa
        ¼ tsp butter

        2 Tbsp boiling water
        Walnuts (optional)



        Method


        Pre-heat oven to 180C.
        Line a tray with baking paper.

        Cream the butter and sugar until light and fluffy.  Sift flour and cocoa.  Add to

        cream mix.
        Fold in cornflakes.  Spoon mounds of mix onto tray, gently pressing the mixture

        together.

        Bake for 15 minutes or until set. When cold ice with chocolate icing.


        To make icing sift icing sugar and cocoa into a bowl.  Add butter.  Add enough

        water to mix to a spreadable consistency.  Ice top of afghan and put a half a
        walnut on top.


        You can also cook this in a sponge roll tin.  Cook for 25 minutes. When cold ice

        with chocolate icing.
