Frozen or Fresh Raspberries or fruit of choice2 for each friand
Instructions
Pre-heat oven 200C. Grease a 12- cup friand tray or muffin tin.
Combine sugar, flour, coconut and almond meal in a large bowl. Add egg whites and use a wooden spoon to stir to combine. Add melted butter and stir to combine. Mix in chopped white chocolate.
Spoon mixture among prepared pans. Place fresh or frozen fruit on top, press to indent into cake mixture. Bake for 15 minutes or until a skewer inserted into the centres comes out clean. Remove from the oven and place on a wire rack to cool slightly.
You can use what- ever fruit you like or have on hand.
