Mix yeast, sugar & water. Wait until bubbles form in mix about 5 minutes.
Add egg, butter, vanilla, salt & flour. Mix to form dough. Knead for 1 minute. Roll out and form into doughnuts. Allow to rise for 30 minutes on floured surface. F
Fry in oil until golden brown. Oil should be approximately 400F or 170C -172C. Cook for 1 ½ minutes or light golden colour. Coat in cinnamon & sugar mixture or your own favourite topping.
