Peach Pudding for two
This dessert has a noticeable flavour of orange zest that enhances the flavour and gives this dessert a delicious distinction. This is an easy dessert especially for two to enjoy, either with ice cream or whipped cream.

- 3 tbsp brown sugar
- 2 tsp cornflour
- 1/4 cup water
- 1 1/2 cups sliced peaches peeled, cut into slices
- 1 tbsp butter
- 1 tsp lemon juice
Topping
- 1/3 cup plain flour
- 2 tbsp caster sugar
- 1/2 tsp baking powder
- pinch salt
- 2 tbsp milk
- 4 1/2 tbsp butter, melted
- 1/4 tsp grated orange zest
In a small saucepan, combine brown sugar, cornflour, and water until smooth. Add the fruit into the saucepan and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low, stir in butter and lemon juice.
For the topping, combine flour, sugar, baking powder, and salt in a bowl. Stir in milk, butter, and orange zest. Transfer hot fruit mixture to an ungreased 2 - cup dish, spoon topping over fruit. Bake uncovered, at 200C. /400F until golden brown, about 25 minutes. Serve with ice cream and cream.
