Potato Discs
I wanted to try something different with potatoes and came across this recipe, which I called potato discs. They are so easy to make and you can use what ever fillings you like. I have since made these several times. These are a lovely change from potato mash. A great filling of mozzarella cheese and dried rosemary.

- 4 medium potatoes, peeled, cut into pieces
- 80 grams cornstarch
- 1 tbsp dried rosemary
- 1/2 cup mozzarella cheese, grated
In a pot add chopped potatoes. Add cold water and boil for 15 minutes or until soft.
Drain potatoes and mash potatoes with butter. Add rosemary and cornstarch. Mix potato mixture together. Roll into 6-8 balls, than flatten out. Add 1 tablespoon of mozzarella to the centre and enclose the ball and than flatten into a disc.
In a non stick fry pan add 1 tablespoon oil on medium heat. Add 4 discs into pan and cook 5 minutes on each side or until a nice golden colour. Remove and keep covered to keep warm. Finish cooking remaining potato discs.
Either eat these on their own or a side with a main meal.
