My Version of Japanese Fried Rice
This is a quick and easy fried rice. I never used the fried rice seasoning, just used the pantry staples I had in the cupboard. I sure love the taste of Japanese food and so far this has become a staple in our family.

- 2 cups cooked rice or cook some fresh rice
- 2 eggs
- 2/3 cup finely chopped carrot
- 2/3 cup finely chopped onion
- 300 grams shredded ham
- I substituted shallots for 4 green flat beans, chopped
- 1 Tbsp sesame oil
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 3 Tbsp oil
Heat 2 tablespoons of oil in a wok or a large frypan over medium heat.
Turn the heat up to high and add 2 eggs into the wok/pan. Stir, breaking the egg yolks and mixing with whites. When mostly cooked transfer the egg to a plate, set aside. I chopped into lengths and cut into small pieces.
Add the last tablespoon of oil to the wok/pan over high heat, Add carrot, flat beans and onion. Stir fry for 1 minute and then add the ham. stir fry for another 30 seconds to 1 minute until onion pieces become transparent.
Add the rice and stir for about 30 seconds, ensuring that each rice grain is separated and there are no lumps of rice.
Add the egg and stir for 30 seconds, add chopped eggs. Add the sesame oil, soy sauce and oyster sauce. Mix well. Turn heat off and serve while still hot.
Can use cold rice, just need to microwave for 1 minute to warm up.
