Cut pork into cubes. In a large pan add oil and cook pork until cooked and browned. About 5 minutes. Set aside in a bowl. In the same pan add onion and garlic, and spices. Cook until aromatic. Return pork back to pan. Add green capscium, carrots, lentils, coconut milk, chicken stock, tin tomatoes,salt & pepper and cook either in a slow cooker or casserole pan on low for about 3 hours, or until pork is cooked and tender. Serve with brown rice on the side.
