Place all ingredients with the exception of coconut milk into a mixer with the dough hook attached and mix to a soft dough. Add the coconut milk gradually until you reach the right consistency. Knead for 5 minutes. Shape the dough into 3 long strands, plait into a loaf. Place onto a tray lined with baking paper and allow to double in size. Brush with an egg wash beforehand.
Pre heat oven to 190oC and bake for 30 minutes and cool on a wire cooling rack.
