Pre heat oven to 200C

Mix all ingredients in a large bowl until combined. Don’t over mix or muffin will be tough and not rise evenly.

Spoon into a greased deep muffin tin. Bake for 15-18 minutes.

Cool on wire rack and dust with icing sugar.
