Apple/blueberry cinnamon cake
Ingredients
150g butter, melted
1 ½ cup stewed apple
½ cup fresh blue berries
1 cup raw sugar
2 eggs
2 cups flour
2 tsp ground cinnamon
2 tsp baking powder
½ cup sultanas
½ cup walnuts
Icing sugar to dust
Directions
Pre-heat oven 160 C.
Mix all ingredients together in a bowl and spoon into a lined and greased 20- 23cm round cake
tin.
Bake for 55-60 minutes or until a skewer inserted into the centre comes out clean.
Leave to cool in the tin for 10 minutes, then turn out onto a cake rack to cool completely.
Before serving dust top with icing sugar.
Serve sliced with a dollop of Greek yoghurt or cream.
