Chicken Laksa




               Ingredients

               500g chicken breast, thinly sliced
               250g pkt vermicelli noodles
               1 small carrot sliced into thin match sticks

               ½ red capsicum thin match sticks
               75g snow peas thin match sticks
               2 Tbsp laksa paste
               200ml coconut milk

               1 Tbsp fish sauce
               1 Tbsp brown sugar
               3 cups chicken stock
               1 Spring onion sliced on angle for garnish

               Method


               Put noodles in a bowl and add boiled hot water and let stand for 5 mins, separate with a
               fork.
               Cut all your vegetables.  Slice chicken thinly.
               Add laksa paste in to deep saucepan and cook for 30 seconds, add stock and bring to a boil.
               Add chicken and simmer till chicken is cooked.
               Add coconut milk, sauce and brown sugar, mix together.

               Simmer for about 5 minutes than serve.
               Place noodles in bottom of bowl add chicken and broth.
               Garnish with the finely chopped veg and chopped spring onion.
