Popcorn Chicken Bites


               Ingredients

               500g chicken breasts, cut into bite sized pieces

               1½ cups buttermilk
               1 tsp salt
               1 tsp black pepper
               ½ tsp cayenne pepper

               1 tbsp Dijon mustard
               1 cup plain flour
               1 tbsp baking powder
               1 tbsp garlic powder
               1 tbsp onion powder

               3 cups veg oil for cooking


               Method
               In a jug with buttermilk, add Dijon mustard, black pepper, salt and cayenne pepper.
               Mix together and put in a reseal able bag.
               Add chicken pieces.

               Seal bag take out excess air and marinade in the fridge for 1-2 hrs or at least 30 minutes.
               In another bag add flour, garlic powder, onion powder, baking powder.
               Mix thoroughly.
               Add chicken pieces to the flour mix and when all coated, add to buttermilk and then into the
               flour mix.

               In a large pot, heat oil on medium heat 130C.
               Not too hot as to burn the oil.
               Cook a few pieces at a time (do not overcrowd), turning to ensure a lovely golden colour for
               about 5 mins.
               Drain on paper towel, cover to keep warm and repeat with the rest of chicken until all
               cooked.
               Serve with whatever you like.
