Mixed Berry Yoghurt Cake


                                                       Ingredients


                                                       125g butter

                                                    1 cup caster sugar

                                                          3 eggs

                                                     1 cup plain flour

                                                   1 cup self-raising flour

                                                   ¾ cup plain yoghurt

                                                   1 cup frozen berries


                                                     Yoghurt to serve



                                                        Method

                                           Preheat oven 180C or 160C fan forced.

                             Grease a 20cm spring form tin. Line base and sides with baking paper.

                              With an electric mixer cream butter and sugar until light and fluffy.

                  Add the flours and yoghurt, stir to combine, and then pour mix into tin, then put frozen berries
                                               on top and gently push down.


                                Bake for 50 minutes or until a skewer inserted comes out clean.

                      Leave to cool in tin for 10 minutes, then turn out onto a cake rack to cool completely.

                                                 Serve sliced with yoghurt.
