Red Velvet Cake


                                                       Ingredients


                                                 ½ cup (114g) shortening

                                                  1 ½ (300g) cups sugar

                                                          2 eggs

                                                 1 ½ oz red food colouring

                                                        1 tsp salt

                                                  2 ½ (312g) cups flour

                                                       1 tsp vanilla


                                                     1 cup buttermilk

                                                    1 tsp baking soda

                                                   1 tbsp white vinegar



                                                        Method

                                                  Preheat oven to 180C.

                                   Grease and line 3 8” round pans or 1 20cm round pan.


                                         Cream shortening, beat in sugar gradually.

                                    Add eggs one at a time, beat well after each addition.

                              Make a paste of cocoa and food colouring, add to creamed mixture.

                      Add salt, flour and vanilla alternately with buttermilk, beating well after each addition.

                                     Sprinkle soda over vinegar, pour vinegar over batter.

                                                 Stir until thoroughly mixed.

                                                   Bake for 30 minutes.


                           Check if cooked with a skewer. It is cooked when skewer comes out clean.

                         Leave to cool for 10 mins and then turn out to cool completely on a cake rack.

                                                   Decorate as you like.
