500gramchicken breast orchicken thighs thinly sliced
250gramvermicelli noodlespacket
1smlcarrotsliced into thin sticks
1/2red capsicumsliced into thin sticks
75gramssnow peassliced into thin sticks
2tbsplaksa paste
1sml tincoconut milk
1tbspfish sauce
1tbspbrown sugar
3cupchicken stock
1spring onionsliced on angle for garnish
Instructions
Put noodles in a bowl & add boiled hot water & let stand for 5 mins, separate with a fork
Cut all your vegetables. Slice chicken thinly.
Add laksa paste in to deep saucepan and cook for 30 seconds, add stock & bring to a boil. Add chicken & simmer till chicken is cooked. Add coconut milk, sauce & brown sugar & mix together. Simmer for about 5 minutes than serve. Place noodles in bottom of bowl add chicken & broth and garnish with the finely chopped veg & chopped spring onion.
