Chicken Laksa


Chicken Laksa

  • 500 gram chicken breast or chicken thighs thinly sliced
  • 250 gram vermicelli noodles packet
  • 1 sml carrot sliced into thin sticks
  • 1/2 red capsicum sliced into thin sticks
  • 75 grams snow peas sliced into thin sticks
  • 2 tbsp laksa paste
  • 1 sml tin coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 3 cup chicken stock
  • 1 spring onion sliced on angle for garnish


  • Put noodles in a bowl & add boiled hot water & let stand for 5 mins, separate with a fork Cut all your vegetables. Slice chicken thinly. Add laksa paste in to deep saucepan and cook for 30 seconds, add stock & bring to a boil. Add chicken & simmer till chicken is cooked. Add coconut milk, sauce & brown sugar & mix together. Simmer for about 5 minutes than serve. Place noodles in bottom of bowl add chicken & broth and garnish with the finely chopped veg & chopped spring onion.
