Pre-heat oven 180 C/160 C fan. Line 2 baking trays with baking paper
Sift flour and baking soda. Add sugar, coconut, cranberries, white chocolate. Melt butter and allow to cool. Lightly beat egg. Add wet ingredients to dry mix and mix till combined. Roll tablespoon sized balls and space them 5cm apart. Bake for 10-15 minutes or until golden. Cool on trays for 5 minutes. Transfer onto a wire rack to cool completely.
