  • 125 grams unsalted butter
  • 225 grams caster sugar
  • 2 large eggs beaten
  • 1 whole orange finely grated rind and 3 tbsp orange juice
  • 150 mls sour cream
  • 140 grams self raising flour
  • 85 grams desiccated coconut


  • 1 egg white
  • 200 grams icing sugar
  • 85 grams desiccated coconut
  • 1 tbsp orange juice



  • Preheat oven to 180C/ 350F/ gas Mark 4. Grease a 23cm/ 9 inch square tin and line the base with baking paper. Cream together the butter and sugar until pale and fluffy, then gradually beat in the eggs. Stir in the orange rind, orange juice and sour cream. Fold in the flour and coconut evenly using a metal spoon. Spoon the mixture into the prepared tin and level the surface. Bake for 35-40 minutes, or until risen and firm to the touch. Leave to cool in the tin for 10 minutes, then turn out and finish the cooling on a wire rack.


  • Lightly beat egg white, just enough to break it up, and stir in the icing sugar and coconut, adding enough orange juice to mix to a thick paste. Spread over the top of the cake, sprinkle more coconut on top and leave to set before slicing into bars.
