Tomato and Aubergine Collezione Pasta


This is a quick and easy meal. You don’t need the pasta I used, just whatever you have in the cupboard. All cooked within 15 mins.

Tomato & Aubergine Collezione Pasta

  • 250 grams pasta
  • 1/2 aubergine cut into cubes
  • 2 red peppers store brought , cut into small cubes
  • 1/2 tin tomatoes
  • salt & pepper to taste
  • 3 tbsp olive oil
  • 2 tbsp fresh parsley finely chopped


  • In a large saucepan add water and salt. Bring water to the boil and cook pasta for about 11 minutes. In a medium frypan add 3 tbsp oil and heat to a medium high. Add aubergine and cook for 2 minutes until light brown. Add chopped capsicum, tomato and seasoning. When pasta is cooked, drain and add tomato mix to pasta and serve.
