Satay Pork Skewers

  • 3/4 cup smooth peanut butter

  • 1/3 cup coconut milk

  • 1/4 cup Thai sweet chilli sauce

  • 2 garlic cloves, crushed

  • 1/3 cup chicken stock

  • 1 kg pork fillet, thinly sliced

  • 1 Tbsp lime juice

  • Fresh stir fry vegetables, to serve

  • Brown rice, to serve


  • You need 16 pre soaked bamboo skewers.
    Preheat oven to 180C/160C fan forced. Line a large baking tray with baking paper.
  • Combine peanut butter, coconut milk, chilli sauce, lime juice, chicken stock and garlic in a bowl. Thread pork onto skewers . Place on a prepared tray. Spoon half the peanut butter mixture onto the pork skewers. Reserve the other half of the peanut butter mixture.
  • Bake skewers for 30 -40 minutes or until pork is cooked through.
    Serve with stir fry vegetables and brown rice.
