The duo of chorizo and beef in a pastry case.
500 grams beef mince
2 chorizo sausage, skin removed
1 large onion, finely chopped
2 carrots, grated
1/2 cup store brought grilled red peppers in oil
1/2 tsp chilli flakes
1/2 cup breadcrumbs
Spices 1 tsp ground coriander, ground cumin, smoked paprika
salt and pepper
Either use homemade puff pastry or store brought
- Preheat oven to 200 C.
- Mix beef mince and chorizo together. Add spices, chilli flakes, breadcrumbs, egg and seasoning. Mix all together until all combined.
Form into three logs.
- Roll out pastry quite thin and spread sausage log onto pastry and seal like making a sausage. Repeat this with the rest of the sausage meat and pastry. When all are done, roll together to form a round spiral.
Brush with egg wash and dust smoked paprika on top. Bake for 1 hour or until pastry is cooked.
- Can serve this with green salad.
