My version of Beef chilli con carne


My version of chilli con carne. It tastes great, but even better the next day.


  • 500 grams beef mince

  • 1-2 chorizo sausage, sliced into pieces

  • 1 onion, finely chopped

  • 1 400 gram tin tomatoes

  • 1 420 gram tin Heinz medium chilli beanz

  • 1 cup water

  • 2 Tbsp tomato paste

  • 1/4 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1/2 tsp chilli flakes

  • 1/2 red capscium, finely chopped

  • Saffron rice
  • large pinch of saffron

  • 3 cups boiling water

  • 1 onion, finely chopped

  • 1 cup white rice

  • Heat a little oil in a large deep frying pan or heatproof dish over medium high. Add the mince and chorizo sausage and cook in for 2-3 minutes or until browned. Add tomato paste, cook for 1 minute.
  • Add the onion, cumin, coriander, chilli and paprika to the mince and chorizo and cook, stirring, for 2 minutes. Add the stock and tomato. Reduce the heat to low, cover and cook for 40 minutes, stirring regularly.  Add beans and stir to combine. Bake for a further 10 mins or until the beans are heated through.
