Chicken Fricassee with Tomato


A creamy combination of chicken, tomato and rice.

  • 2 Tbsp oilve oil

  • 1 whole chicken or 8 chicken pieces, patted dry

  • 1 brown onion , chopped

  • 5 medium tomatoes, peeled, chopped

  • 1/2 cup white wine

  • 2 cloves garlic, chopped

  • 2 Tbsp fresh thyme

  • 1/2 cup fresh basil leaves

  • steamed rice or crusty bread


  • Heat oil in pan , add chicken pieces, and fry until a golden brown . Remove from pan and set aside.
  • Add onion and garlic to pan and cook until soft, then add thyme and cook for another 1 minute.
  • Add the tomatoes, fry for a few minutes, then return chicken to the pan along with the wine. Bring to a simmer, lower the heat, cover and cook for 30 minutes or until chicken is cooked through.
    Stir the basil through and serve with rice or crusty bread.
