A creamy combination of chicken, tomato and rice.
2 Tbsp oilve oil
1 whole chicken or 8 chicken pieces, patted dry
1 brown onion , chopped
5 medium tomatoes, peeled, chopped
1/2 cup white wine
2 cloves garlic, chopped
2 Tbsp fresh thyme
1/2 cup fresh basil leaves
steamed rice or crusty bread
- Heat oil in pan , add chicken pieces, and fry until a golden brown . Remove from pan and set aside.
- Add onion and garlic to pan and cook until soft, then add thyme and cook for another 1 minute.
- Add the tomatoes, fry for a few minutes, then return chicken to the pan along with the wine. Bring to a simmer, lower the heat, cover and cook for 30 minutes or until chicken is cooked through.
Stir the basil through and serve with rice or crusty bread.
