This cake has many steps to it, but is well worth the steps. A lush moist tasting French apple cake this is my take .

Ingredients<br>Batter
100 grams flour
100 grams cornflour
150 grams caster sugar
3 large whole eggs
1 tsp baking powder
150 gram whipping cream
75 grams unsalted butter
30 ml rum

4-5 apples (Fuji, Royal gala)

50 gram walnuts, chopped
Directions
- Make sure to have all the necessary ingredients ready. Preheat oven to 200 C .
Place the soft butter and sugar in a bowl of an electric mixer. With the scrapper beater, mix until butter and sugar are well mixed. Add eggs one at a time, mixing well. - Add the cream and rum to the mix and then the flour and baking powder. Mix until all combined.
- Peel the apples, then core and cut into thin slices.
- Grease a square oven dish with baking spray and line with baking paper.
Pour the cake mixture into the dish and arrange the apple slices over the whole surface of the cake. Sprinkle chopped walnuts on the surface. - Bake the cake for 30 minutes. Use a knife to check whether the centre of the cake is cooked. The blade should be dry when you take it out. If centre is not cooked put back in the oven and cook at 1 minute intervals and check if cake is cooked.
Remove from the oven before serving. Can sprinkle some icing sugar over the cake. Enjoy.
