Okonomiyaki is a savoury Japanese pancake containing a variety of ingredients in a wheat flour based batter.  The name is derived from the word okonomi, meaning “how you like” or “what you like”, and yaki meaning “cooked”.

Ingredients

  • 4 eggs

  • 1 cups plain flour

  • 1 tsp baking powder

  • 1/4 cup mirin seasoning

  • 2 tsp sesame oil

  • 3 cups finely shredded white cabbage

  • 3 spring onions, finely sliced

  • 2 cm piece fresh ginger, peeled finely grated

  • 2 celery sticks, julienned

  • 1 carrot, julienned

  • 2 Tbsp rice wine vinegar

  • 1/4 cup vegetable oil

  • 20 prawns, tails intact

  • 3 chicken thigh fillets, thin sliced strips

  • chilli and mayonnaise to serve

Directions

  • Whisk eggs in a large bowl. Sift flour and baking powder together and gradually whisk into egg. Stir mirin and sesame oil, 2 cups cabbage the onion and ginger into batter until combined . Season.
    Cover and set aside for 20 minutes
  • Combine the celery, carrot and rest of the cabbage and vinegar in a bowl. Set aside for 5 minutes to lightly pickle.
  • Heat 1 tbsp of oil in a non-stick fry pan over medium heat. Add quarter of the batter and cook for 2-3 minutes on each side until cooked through. Transfer to a plate and cover to keep warm with foil or in a warm oven. Cook remaining batter.
  • Cook chicken strips in pan until cooked, set aside and add more oil if needed and cook prawns for 1-2 minutes or until cooked.
  • Top pancakes with pickled vegetable, chicken and prawns and drizzle over chilli sauce and mayonnaise. Enjoy
