Delicious Peach and Apricot Banana Bread Recipe: A Fruity Twist on a Classic Treat
Banana bread with peach and apricot
Ingredients
- 1/2 cup coconut oil
- 1/2 cup honey
- 1/3 cup dried apricots finely chopped
- 1/3 cup dried peaches finely chopped
- 2 eggs
- 3 ripe bananas mashed
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp vanilla extract
- 2 1/2 cups plain flour
Instructions
- Pre-heat oven to 180C. Line a 8 inch loaf tin with baking paper allow to overhang on the sides.
- In a large mixing bowl, mix coconut oil, honey, and vanilla extract together.
- Add mashed bananas, egg, flour, baking powder, baking soda, chopped apricots and peaches and salt and beat together until mixture is combined.
- Pour mixture into a loaf tin . Smooth the top.
- Bake for 1 hour or when a toothpick is inserted and it comes out clean.
- Allow banana bread to cool in tin for 10 minutes. Turn out onto a cake rack to cool completely.
