Ingredients
  

  • ½ cup coconut oil
  • ½ cup honey
  • cup dried apricots finely chopped
  • cup dried peaches finely chopped
  • 2 eggs
  • 3 ripe bananas mashed
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • cups plain flour

Instructions
 

  • Pre-heat oven to 180C. Line a 8 inch loaf tin with baking paper allow to overhang on the sides.
  • In a large mixing bowl, mix coconut oil, honey, and vanilla extract together.
  • Add mashed bananas, egg, flour, baking powder, baking soda, chopped apricots and peaches and salt and beat together until mixture is combined.
  • Pour mixture into a loaf tin . Smooth the top.
  • Bake for 1 hour or when a toothpick is inserted and it comes out clean.
  • Allow banana bread to cool in tin for 10 minutes. Turn out onto a cake rack to cool completely.
