Chicken and Corn Soup

  • 500 grams chicken breast can use thighs also
  • 4 spring onions chopped
  • 500 ml chicken stock
  • 2 tbsp plain flour
  • 2 cobs fresh corn (tinned kernels can be used)
  • 1 carrot thinly chopped
  • 2 tbsp oil veg or canola
  • 1 clove garlic chopped


  • Cut chicken to bite sized bits. Add oil to large pot and cook chicken for 5 minutes. Add garlic, green onions and carrot and cook till softened. Add flour and cook flour into mix, then add stock. Cook medium heat for 20 minutes. Add chopped green spring onions before serving. Serve in bowls with crusty bread.
