Orange and coconut plaited loaf
- 450 grams plain flour
- 1 tsp salt
- 8 grams dried yeast
- 1 large egg beaten
- 1 tsp caster sugar
- 50 grams desiccated coconut
- 200 ml coconut milk
- 2 tsp orange essence
- 1 whole orange rind finely grated and juice
- Place all ingredients with the exception of coconut milk into a mixer with the dough hook attached and mix to a soft dough. Add the coconut milk gradually until you reach the right consistency. Knead for 5 minutes. Shape the dough into 3 long strands, plait into a loaf. Place onto a tray lined with baking paper and allow to double in size. Brush with an egg wash beforehand. Pre heat oven to 190oC and bake for 30 minutes and cool on a wire cooling rack.
