Heat oil in a wok or deep pan add chopped onions and cook until they turn a nice brown colour, remove from pan or wok.
Mix egg and soy sauce and sesame sauce. Set aside. Add ½ tbsp of oil to wok or pan and swirl to coat the surface, add egg mix, working quickly until egg puffs then flip other side to cook then set aside, chop into small pieces. Heat 1 tbsp oil in wok add prawns and cook till changes to an orange colour, add chicken, along with carrots, peas and cooked onion, stir fry for 2 minutes. Add rice green onions, tossing to mix well, stir fry for 3 minutes. Add 2 tbsp soy sauce and chopped egg to rice mixture and fold in, stir fry for 1 minute and serve.
