Raspberry Slice


  • 120 grams butter
  • 1 egg
  • 120 grams caster sugar
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup raspberry jam
  • Icing
  • 2 cup icing sugar
  • 1/4 tsp butter softened
  • 2 Tablespoons hot water
  • Few drops of raspberry or strawberry essence


  • Pre-heat oven to 1800C Cream butter and sugar, add vanilla. Add egg then sifted dry ingredients and mix until it forms a stiff dough. Divide in half. Roll out both halves to the size of the slice tin and ½ inch thickness. Spread jam over the bottom layer. Place other rolled out pastry on top. Bake for 30 minutes, set aside to cool and ice with raspberry icing. Icing Sift icing sugar in bowl. Add butter and enough water to make it a smooth consistency.
