Heat a large flameproof casserole pan over high heat. Cook pork pieces in 2-3 batches turning occasionally, for 5 mins or until brown all over. Transfer to a plate.
Add onion, garlic and ginger to the pan. Cook, stirring for 2 mins or until onions soften slightly. Add curry paste. Cook, stirring for 1 min or until aromatic.
Return the pork to the pan. Add tomato, coconut milk and cauliflower. Cover and cook for 2 hours or until pork is nice and tender. Stir in the peas. Season.
Serve in bowls with some brown rice.
