Pork & Cauliflower Curry

Ingredients
  

  • 500 grams pork cut into 3 cm pieces
  • 2 brown onions cut into wedges
  • 2 cloves garlic crushed
  • 1 tbsp fresh ginger finely grated
  • 1/2 cup korma paste
  • 400 gram can diced tomatoes
  • 1 head cauliflower diced small florets
  • 1 cup frozen peas

Instructions
 

  • Heat a large flameproof casserole pan over high heat. Cook pork pieces in 2-3 batches turning occasionally, for 5 mins or until brown all over. Transfer to a plate.
  • Add onion, garlic and ginger to the pan. Cook, stirring for 2 mins or until onions soften slightly. Add curry paste. Cook, stirring for 1 min or until aromatic.
  • Return the pork to the pan. Add tomato, coconut milk and cauliflower. Cover and cook for 2 hours or until pork is nice and tender. Stir in the peas. Season. Serve in bowls with some brown rice.
