Slow Cooked Pork and Lentil Curry

Ingredients
  

  • 500 grams pork cut into cubes
  • 2 Tbsp oil
  • 1 lge onion chopped finely
  • 2 cloves garlic crushed
  • 1 Tbsp ground cumin
  • 1 Tbsp mild curry powder
  • 1 tsp ground tumeric
  • 2 cans brown lentils liquid drained
  • 1 can coconut milk
  • 4 carrots cut into 1cm pcs
  • 1 cup green beans cut in half
  • 1 1/2 cups chicken stock
  • 1 can tin tomatoes
  • salt & pepper to taste
  • parsley for garnish
  • 1 green capscium chopped fine

Instructions
 

  • Cut pork into cubes. In a large pan add oil and cook pork until cooked and browned. About 5 minutes. Set aside in a bowl. In the same pan add onion and garlic, and spices. Cook until aromatic. Return pork back to pan. Add green capscium, carrots, lentils, coconut milk, chicken stock, tin tomatoes,salt & pepper and cook either in a slow cooker or casserole pan on low for about 3 hours, or until pork is cooked and tender. Serve with brown rice on the side.
